Imagine the mighty roaring of a river wide, blue and crystal clear, in the depths of a mountain valley, coursing along boulder banks with traditional houses full of character, sprawling green trees of various hues, running still under a hefty stone bridge. That is the heartbeat of the Yoshida River, the lifeblood of Gujo Hachiman, the Town of Water. Canals girding, criss-crossing the town, its transparent channels through which bright, colored carp leisurely swim about, were built by the Endo Tsunetomo, the 6th Lord of Gujo Hachiman Castle in 1660 of the Kanbun Era, to safeguard the town from fires after it was ravaged to the ground in 1652. In summer from mid-July to early September, this sleepy, secluded town bursts into effervescent life as more than 300,000 people converge to join Japan's longest-running dance, the Gujo Odori (Dance)! Stroll down alleyways filled with traditional architecture from centuries gone by, and dive into daily life in an abundance of water along with exclusive local activities through this 5-hour guided walking tour showcasing all things Gujo. From the scenic Igawa Lane with its vivid, well-loved and well-fed carp, to a spectacle of energetic, lively Gujo Odori moves, to the grand Yoshida River that children leap into for respite from summer's sweltering heat. Take the road less traveled - dotted with fresh, gushing springs and paved in epic history blending seamlessly into the present here in Ogaki. Stroll around this city of deep, understated beauty, which flourished as both a post town and a castle town on the Tokaido Highway during the Edo period, and you‘ll be quick to find vestiges of a bygone era sketched into its visage - from the boats ambling down in its river canals, to the sturdy remains of an old lighthouse and port, and the large storehouses that house elaborate festival floats. One can also easily find numerous, famous sites of natural spring water around the area, living up to its name, the “City of Water” from days of old. Delight in the fresh verdure of the cherry trees lining the banks of the Suimon River, the sight of the iconic red Sumiyoshi Bridge, the soughing of the lone weeping willow gently swaying in the wind as ducks and black carp swim idly by while you follow the footsteps of unparalleled haiku poet, Matsuo Basho at the final stop of his major journey on foot, and a setting from his masterpiece - Oku no Hosomichi, (often translated as The Narrow Road to the Deep North).

 

Try your hand at traditional crafts like mizu-manju (sweet water mochi) making and masu (wooden box) making, with steps inspired by techniques used in tasks like water transportation and sake brewing from the past, cultivated by the region’s abundance in water. Relive the day on which Japan's history was forever changed by its largest, most tumultuous and most decisive battle, fought on the grounds of Sekigahara (also one of the world's three major ancient battlefields) in the year 1600. See with your own eyes and tour the very areas ventured by Tokugawa Ieyasu, the founder and first shogun of the Tokugawa shogunate, and his opponent, Ishida Mitsunari, as you discover the historical setting of the battle with weaponry and armory. Explore the Gifu Sekigahara Battlefield Memorial Museum, featuring revolutionary technology in showcasing the details of main happenings and people of the battle, as well as exhibits both original and models that you can touch and interact with. Equip yourself with Sengoku armor and weapons, before making your way around the remains of Ishida's base camp and taking commemorative photos. Choose between a lunch of delicious Udon with tempura (in either Eastern or Western-styled broth) plus complimentary souvenir, and Sukiyaki made from famous Omi beef. Turn back time and imagine yourself fighting to the very finish, joining in actions of bravery or perhaps, treachery, in the greatest samurai battle of all - the Battle of Sekigahara.

Welcome to the tasty culinary world of Hida Takayama! Featuring the mouth-wateringly rich and earthy flavors cultivated deep in the heart of the mountains, prepared using the very best of nature's bounty. Start with a refreshing serving of complimentary Hida apple juice, before cooking and making delicious regional dishes and onigiri (riceballs) with the guidance of a local cook, using fresh ingredients from the Hida region and other areas in Gifu Prefecture.* If requested beforehand, adjustments can be made for those who cannot have beef, which will be swapped out for Hida pork and buri (Japanese yellowtail) from Toyama. This fish has been long enjoyed as a delicacy in the area along the Etchu Highway - so much so it's also called the Buri Highway. End your cooking and dining session with dessert, featuring tochimochi - traditional sweets made from Japanese horse chestnuts and ricecakes. As you finish your course, hear of tales behind the history and setting of how the bitter Japanese horse chestnut found its place on the dining table of Japanese households, along with other stories highlighting the natural features of Hida, as well as its illustrious past.

Rediscover fine dining done the way of the samurai with Sowaryu Honzen Kuzushi and the Sowaryu-style tea ceremony in Hida Takayama, a town famous for its well-established traditional crafts and historical districts. The Sowa style of tea ceremony, which left an indelible mark on the culture of Kyoto as a warrior-style tea ceremony practiced in various places from the gardens of Ohara Town's Sanzenin Temple to the tea rooms of Kinkakuji, was founded about 400 years ago by Shigechika “Sowa” of the Kanamori family that ruled the Hida-Takayama domain. It is said to be have been passed down mainly among Buddhist temples in Takayama. Prepared in the refined spirit of the tea ceremony is the Sowaryu Honzen, a kaiseki course said to date back from the late Edo-period, popular with the samurai class, and a rare luxury that very few restaurants continue to offer nationwide. While it originally features a staggering array of 30 dishes, the Sowaryu Honzen Kuzushi (simplified) course lunch instead showcases a selection of 11 dishes expertly put together from an abundance of fresh, local ingredients. After your sumptuous meal at the two Michelin stars' Ryoutei Susaki, you will then be transported to the long-established Nobato Chaho where you will learn about the differences between the tea ceremonies held by the merchant class and that of the samurai class, and enjoy Japanese sweets with Usucha ("thin tea" - usually used for tea ceremony).

Learn about the differences between the tea ceremonies held by the merchant class and that of the samurai class, and enjoy Japanese sweets with Usucha ("thin tea" - usually used for tea ceremony). After that, it's time for a change of clothes and pace! You'll put on kimono and hakama, before moving to the Emaden (shrine building where votive picture tablets are hung) of the Sakurayama Hachimangu Shrine. Calm and steady your heart as an instructor of the Muso Jikiden Eishin-ryu Iaido, one of the two most widely practiced schools of iaido in Japan, guides you through a series of kata (form, movement), such as battou (sword-drawing), kobo (attack and defense), nattou (sword-sheathing). You will receive a certificate of completion upon finishing the iaido activity. From the calm and graceful steps of the tea ceremony, to the swift but deadly moves of iaido, walk the paths of righteousness the way the samurais did, in the spirit of bushido.
